Garlic Scallops

I haven't had scallops in ages. I decided to have some for New Year's Eve while my better half was getting the caviar. Ica had some at the fish department, frozen ones. For a full meal (with rice and a salad) you need 6 scallops a person, for an appetzier 2-3 are enough.

You also need butter, shallots, garlic, cilantro, bread crumbs and fresh white mushrooms.

Melt a good bit of butter and sautee a lot of shallots and garlic, chopped fine. Put half in the bottom of an oven form and put the sliced mushrooms on top. Slice the scallops in half lengthwise and place them on top of the mushrooms. Now dump cilantro, French herb mixture if you have some, a pinch of salt and some bread crumbs into the rest of the butter and mix well. Dot each scallop with some of the bread mixture.

Put in the oven at about 180°C for about 5-6 minutes, until the bread crumb mixture starts to brown. Serve with fresh crusty bread and good champagne.
