Banana Nut Bread

Right. The bananas you bought last week are now brown and soft and no one in the household will touch them. Don't throw them out! With 3 bananas you can make this delicious nut bread:

Cream together:
1/3 cup of butter
1/2 cup of white sugar

Beat in 2 eggs, one at a time.

Sift together 1 1/2 cups of flour, 1 teaspoon of baking powder, 1/2 teaspoon each of soda and salt.
Mash the bananas (should yield 1 cup).

Add the dry ingredents to the batter alternatively with the banana, just barely mixing everything.

Now add the good stuff: a half a cup of walnuts or almonds, the same of chocolate chips, maraschino cherries if you like. Turn into a well greased loaf pan and bake at 350 F/ 180 C until a toothpick inserted in the middle comes out clean. Depending on your oven this can be between 35 and 50 minutes. Remove from pan, cool, wrap in aluminum foil and store overnight, it really tastes better the next day. Serve with softened butter and don't ask for the calorie content!
