Yummy Catfish

Get a nice sized catfish (Wels in German) filet from your fish market, figure 150 - 200 grams fish per person. Wash and pat dry. Now make a dipping sauce out of sour cream, chopped green onions, Dijon mustard, a pinch of salt, and enough milk to make it not-too-think-not-too-thin. For breading grind up a bunch of pecan nuts (walnuts will do, but pecans are better).

Now make the oven hot enough - 350 F / 180 C will do nicely - dip the catfish in the batter, then in the breading and lay in a pan. Cook for 12-15 minutes until the fish is done. Catfish isn't as fragile as some fish are.

Serve with rice and salad and a dry, white wine.
