No matter how we try, there are always 2-3 heaping tablespoons of fresh fruit salad left over from breakfast. If we are lazy it just goes bad while we are at work. If we have enough time, I open up a big ziplock freezer bag and shovel in the new offering on top of the old. As my grandma used to say, "waste not, want not".
But what to actually do with this big frozen block of fruit?
One hot summer evening when we were not really hungry I got out the bag and banged it around a lot to loosen up the fruit. I got out the kitchen machine, put in the sharp knife in the bottom, and started dumping frozen fruit into it. On high. And got lots of pieces of frozen fruit all over the kitchen.
So I tried again, this time whizzing on low and then working my way up to high with the input hole closed up. Better, but no prize yet, it looks yucky.
There is some cream in the fridge, so I start putting some in, thinking it will magically whip itself with the blade. It doesn't, and makes a sludge out of the fruit. So I whipped the rest of the cream with sugar, and folded in into the sludge with the mixer. Suddenly, a yummy consistency - with nice little bits of frozen fruit.
Decant to bowls, garnish with fresh fruit like cherry halves, and enjoy.
Has lots of calories on account of the cream, but hey, you bought the cream 2 weeks ago and it is going to go off soon anyway.
