This is a favorite, and is different every time I make it. It is the start of the GI diet I've done twice now - three days of eating nothing but vegetable soup, morning, noon, and night.....
Start with a pot big enough for how ever many people you want to feed: 1..n. The bottom of the pot gets a generous portion of olive oil poured in. Then you put in one garlic clove per person, sliced, and some onion or shallots if you like. Then put in different bits of different kinds of vegetable. I like celery and celery root, cabbage ("Spitzkohl" is the best), bell peppers, zucchini, Brussels sprouts, mushrooms, kohlrabi, broccoli and tomatos. Don't use everything, but don't have too few different items, that gets boring.
Chop them in bite size pieces and sautee the whole mess (don't let it burn). Add a spoon or two of broth powder or a big boullion cube and just enough water to cover the vegetables, and then boil. As soon as it boils I serve it - I like my veggies crunchy, not cooked to death.
Put some real Parmesan cheese, cut into little cubes, and a spoonful of the expensive pesto in your bowl before serving. Yum!
If one is not dieting then you can add bits of left-over meat, beans, rice, noodles, red lentils - whatever is in the house. Alphabet soup noodles are good because the noodles cook quickly.
